Grapefruit cake!

Hello! The new week has just begun and let’s energize ourselves with this little sunshine cake! I love fruits and making desserts with them so I made this grapefruit cake.Advice: try the grapefruit before making the dough, if it’s not sweet enough, add more sugar.

So to make this cake you’ll need:

  • 1 grapefruit
  • 100 g sugar
  • 50 g honey
  • 100 g melted butter
  • 150 g all purpose flour
  • 3 eggs
  • 50 ml grapefruit/ lemon/ orange juice
  • a handful of hazelnut

Instructions:

Preheat the oven to 180 C. Smear a stick of butter on parchment paper then cover the baking pan with it.

Divide grapefruit in half. Squeeze the juice from one half, cut the other one into slices.

Whisk butter with sugar and honey then add eggs one by one and whisk everything again properly. Add juice. Add flour and mix everything.

Put slices of grapefruit on the bottom of covered baking pan, then put the dough. Bake 40-50 min. Let it cool for 15-20 min.

Grind hazelnuts. Turn the cake and remove the parchment paper. Sprinkle the cake with nuts.

It’s done! Pretty easy! I think it’s the most important thing when it tastes delicious and it doesn’t take too much time to make. Hope you enjoy it!

It’s my first post here and I really hope you’ll enjoy seeing all things I cook and bake here! So today I started with some beet-carrot muffins. Have you ever tried them? I haven’t. It’s the first time I bake them and actually eat them. I should say they came out pretty good! So here’s the recipe. You’ll need:

  • 1 grated carrot (100-120 g)
  • 1 grated beet (100-120 g)
  • 100 g whole wheat flour
  • 80 g brown sugar
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger.

Instructions:

Whisk the eggs with sugar. Add carrot and beet. Thoroughly mix everything up till the veggies give some juice. Then add flour, baking powder, soda and spices. Again mix it up. Put the dough into muffin cups and bake it during 30-40 min (180 C preheat oven).
