Nut pastries!

It’s 8 March! Happy International Women’s Day! Oh, seems like the weather is also going to celebrate this day with a lot of sun… Finally! You probably don’t know but it’s pretty cold here in March that’s why I’m happy to see a little piece of sunlight.

Anyways there’s no holiday without a cake or pastries! So this amazing and meaningful holiday I made NUT PASTRIES! OMG, I wish you could smell and taste them! They are just delicious!

You will need:

  • 100 g any nuts (I used almonds and hazelnuts)
  • 50 g all-purpose/ whole wheat flour
  • 100 g brown sugar
  • 4 eggs (separate yolks from whites)

For merengue:

  • 2 egg whites
  • 100 g sugar


Wash, clean and dry nuts and grind them. Whisk 4 yolks with 50 g brown sugar, add ground nuts and flour. Mix thoroughly.

Preheat oven 200 C.

Whisk ess whites with left sugar and add this mass to the nut mixture. Mix carefully. Put the dough on baking tray covered with baking paper. You may do it in two ways: using spoon form a few little pieces or again using spoon form one big piece which then you will cut into little ones. Actually the second way is easier than the first one because you will get accurate pieces. I came up with this way when pastries had been made already.

Bake pastries during 10 min. Then cool them and cut into little pieces. Do not turn off the oven.

For merengue whisk ess whites with sugar until the mass is thick. Then put it on pastries and bake for several minutes till they are brown but tot too much.
