Cherry Puff Pastry Tarts!

I’ve been really into puff pastry lately. It’s so easy to use especially if you just start baking.  You can find puff pastry at any supermarket or you can do it by yourself but it’s pretty time-consuming. Puff pastry is not only used in sweet treats but also as a base for pizza, vegetable tarts and  quiches. I went for sweet treats and made this puff pastry tarts with cherry.

Ingredients:

  • 600 g frozen cherries
  • 450 g puff pastry
  • 4 tbsp brown sugar
  • 1 egg

Instructions:

Thaw out frozen berries on stove. Add sugar and boil for 5 min then cool them.

Preheat the oven to 180 C.

Roll out the dough (0,5-1 cm). Cut out squares (even number). Put  half of squares on baking sheet covered with parchment.  Whisk the egg and smear the dough with it. Cut out little square holes in the other half of squares and put them on smeared dough from above. You’ll get little square baskets. Bake for 20-30 min.

Into these baskets put berries. Leave them for the night for juice to soak up. Sprinkle with icing sugar.
